Foodie Friday: Chocolate Zucchini Muffins

Are you looking for a yummy way to use up this year's zucchini crop? Or, like me, do you still have some stashed away in the freezer from last year's harvest? Well, look no further. Here is a way to use up 1-2 cups of grated zucchini at a time. The original recipe is from allrecipes.com. Of course I tweaked it a bit!

Ingredients:
-3 eggs
-2 cups white sugar
-1/2 c cinnamon applesauce
-1/2 c oil
-1/3 c unsweetened cocoa powder
-1 1/2 t vanilla extract
-1 c grated zucchini (The original recipe called for 2 cups. I only had one.)
-3 c baking flour
-1 t baking soda
-1/2 t baking powder
-1 t salt
-1/4 t ground cinnamon
-1/4 t ground nutmeg
-1/4 t ground cloves

Directions:
1. Beat eggs with electric mixer. Add in sugar and beat together. Add in applesauce, oil, cocoa, and vanilla. Mix well.
2. Mix in zucchini. Add in remaining ingredients. Mix well.
3. Scoop into 24, lined muffin tins. Bake at 350 for 20-25 minutes.

These sound excellent! I've been cooking with a lot of zucchini this summer but I haven't been baking with it. I'd love to try these! Love the cinnamon applesauce here!
